Start the rice first(we all have different ways to cook it, so do it your way.) After you get rice started and its almost done cooking, heat a skillet up on the stove top. No oil, or butter or anything bad stuff. Place chicken in skillet, and one side add a hair of sea salt and a hair of italioan spice blend. Cook till chicken is done, about 3-4 minutes on each side, unless you are using a bigger piece then cook longer. Chop up the cucumber into slices put on plate with carrots, add done chicken and 3/4 cup rice, place chicken on top of rice and there you have it.
