1 shallot, minced

1 cup brown rice

2 teaspoons Thai chili hot sauce
1/2 teaspoon sugar


How Do I Make Thai Coconut Chicken and Rice?

Here is how you make Thai Coconut Chicken and Rice:

In a large stock pot, heat oil over medium high heat. Season chicken with salt and pepper. Place in hot oil and cook on both sides until golden brown (about 6-8 minutes). Add shallots and peppers. Reduce heat to low, cover and cook for 10 minutes. Add snow peas, coconut milk, soy sauce, lime juice, ginger, hot sauce, rice, and sugar. Bring to a boil then reduce heat to low. Cook until almost all the rice is absorbed (about 40 minutes).
