2 teaspoons fish sauce (easy to find in the international section of most stores)
1 teaspoon sugar (it just adds a little something, even in tiny amounts)




SPINACH:

Large spinach leaves, thoroughly rinsed (they can be quite sandy)
1 tsp garlic
1 tsp ginger
1 tsp birdseye (Thai) chilies
1 tbsp low sodium soy
2 tsp fish sauce

Here is how you make Thai Grilled Chicken with Spinach and Rice:

For Chicken:Mix the ginger, garlic, chili pepper, soy sauce, fish sauce and sugar in a large dish. Make shallow slices across the surface of the chicken breast and place in the marinade. Allow to sit for at least half an hour. Grill thoroughly, basting occasionally with remaining marinade.For Spinach:Spray a large skillet with cooking spray, place over high heat and add the garlic, ginger and chilies. Allow these to toast slightly, tossing lightly with a spatula. Add the rinsed spinach leaves and reduce heat to medium. When leaves have wilted to about half capacity (this happens pretty quickly), add the soy and fish sauce. Toss gently with spatula, reduce heat to low, and cook until leaves have fully wilted (but don't overdo it or they will be too limp).Serve with 1 cup of jasmine rice per person.
