What Are The Ingredients For Wild Rice and Chicken Stuffed Peppers Recipe?

The ingredients for Wild Rice and Chicken Stuffed Peppers are:

2 lg chicken breasts (or 3 small)
1 med yellow onion, diced
1 lg or 2 sm garlic cloves, chopped fine
¾ lb mushrooms, sliced (save some slices for topping peppers)
1/2 cp good white wine (or dry Sherry for a little different flavor)
1 cp chicken broth, 99% fat free
4 lg or 6 sm sweet peppers, any color, slice off top, remove seeds/membranes, par-boil
1 pkg Long grain and wild rice (Rice-a-Roni works just fine – cook per directions)
4 oz sour cream, low fat
4-6 oz Italian blend finely shredded cheese
1/4 tsp any Herbs you like…I usually used fresh Thyme, Savory, Parsley and a 1/8 tsp of dried Dill Weed
½ tsp Garlic powder
½ tsp Onion powder
Salt & Pepper to taste


How Do I Make Wild Rice and Chicken Stuffed Peppers?

Here is how you make Wild Rice and Chicken Stuffed Peppers:

Cook rice per package directions.Dice chicken breasts and sauté till pink is gone. Set aside.Sauté onion, garlic and mushrooms in butter or olive oil/butter blend till they start to become tender. Add herbs/spices and white wine and cook till wine is reduced and almost gone, then add chicken broth. Continue to cook over med heat till broth reduces by half. Take off the heat. Add in chicken and cooked rice and stir. Add sour cream and most of the cheese (save some for sprinkling on top of peppers). Stir till mixed thoroughly and thickened. (If it’s too thick, just add wine or chicken broth to thin a little).Cut peppers in half and stuff with filling; sprinkle a little cheese on top and place a slice of mushroom on top of each.Bake in baking dish at 350 degrees for approx 30 minutes or until warmed through and cheese is melted.Makes 8-12 stuffed peppers(If making this for several people, just slice peppers in quarters or 6ths and top each one.)Number of Servings: 8Recipe submitted by SparkPeople user KTYDID.
