2 Chicken breasts or 3 tenders (cooked in 1/2 c water, a little salt and garlic powder, chopped and set aside)
3 Cups cooked rice (or needed amount to figure 1/2c for each serving- perhaps more needed for men)
1/2 medium onion chopped
3 stalks of celery chopped
1 red pepper, medium or 1/2 red and 1/2 green
broccoli, cut off branches into larger chunks if needed
carrots, cut into slices
1 sm zuchini, cut into slices or 3/4" chunks
1 sm yellow squash, cut into slices or 3/4" chunks
2 mushrooms (sliced)
3 Cups of chopped Kale (or any good leafy green)
1 cup chicken broth, low salt preferred
2 tbsp corn starch
2 Tbsp oil, olive, sesame, rice bran
2 oz of peanuts, chopped for garnish


How Do I Make Yum Yum Chicken?

Here is how you make Yum Yum Chicken:

Cook chicken breasts in water and seasonings, when just cooked through set aside and chop into 1/2"-3/4" chunks. Chop the vegies setting the celery and onion on one plate, the peppers, broccoli, carrots and squashes on a plate or in a bowl; kale and mushrooms to be added last. Put any remaining broth on breasts that are set aside. Warm up your large skillet with 2 Tbsp olive oil over med high heat then add celery and onion, stirring for a minute or two just until barely starting to cook; add larger group of vegies with peppers, squashes and broccoli, stir around and add the chicken broth, cover and let steam on a little lower heat for about 5 minutes. Add kale and mushrooms along with the cornstarch which has been dissolved in 1/2 c water, Stir until corn starch is clear.
