Here is how you make Cook's Illustrated Stovetop Roast Chicken:

Heat Oil over medium high heat. Place chicken skin down. Cook for 4-5 minutes until skin is golden brown.Turn heat down to low. Add chicken broth and turn chicken over. Cover and cook for about 10-15 minutes, or until chicken reaches 160 degrees.Remove chicken from skillet and pour liquid into a 2 cup measuing cup. Heat remaining oil over medium high heat and return chicken to skillet, skin side down, for about 4 minutes. Place chicken on a plate and tent loosely with aluminum foil.Lower the heat to medium and add shallots. Cook for 1 minute until softened. Add flour and cook for another 30 seconds. Skim fat off of reserved cooking liquid. If necessary, add chicken broth to bring liquid back to 3/4 cup. Drain chicken juices from plate into skillet. Add broth to shallots, lower heat, and reduce to 1/2 cup. Off heat, add butter and stir into sauce. Add lemon juice, parsley, and chives. Pour over chicken and serve.Serving Size:?Makes 8 Servings
