Here is how you make Spiced Roast Chicken:

Preheat oven to 450 degrees.Pat chicken dry. Stir together spices, salt, and 1 1/2 tsp of oil. Rub this mixture on the chicken. Heat remaining oil in a heavy pan, preferably an iron skillet, over medium high heat until almost smoking. Put coated chicken pieces in the skillet and brown on both sides - for about 5 minutes per side. Place entire skillet on the center rack of the oven and roast until chicken is done, 18-20 minutes. Remove the chicken to a serving plate, and deglaze the pan with water, scraping up the browned bits.
