The smell alone while it's cooking is amazing...Preheat oven to 450.Rinse and dry the chicken. Put 1 tb butter inside the cavity of each bird. Sprinkle all ingredients inside (I didn't measure any...about a teaspoon each) and Tb of garlic. Rub the outside of each with butter lightly. (I used the wrapper of a stick that had about 1/2 a Tb butter still left on it, it covered most the 4, and then I didn't bother with the last one.) Place upside down on sprayed cookie sheet, preferably one with an edge about an inch high. Place in oven and roast for 5 minutes, then turn to one side. Roast another 5 minutes and turn to the other side. Roast 5 minutes and then place back upside down and roast for 35 minutes, basting every 10 minutes or so from the juices in the pan. When the 35 is up, turn over to the side, and roast an additional 35 minutes. They are done when the inside temp is 170. I serve these with roasted veggies and a large salad. Sooo good!
