Here is how you make Lemon Roasted Chicken Thighs:

Preheat oven to 425 degrees F. Place potatoes, tomatoes and carrots on a jelly roll pan coated with cooking spray. Drizzle with olive oil; sprinkle with 1tblspn rosemary, 1tblspn thyme, 3/4tsp salt, and 1/4tsp pepper. Toss gently, and spread into a single layer on pan. Bake for 30 minutes; remove mixture from pan when done, and keep warm. Pour lemon juice over chicken, sprinkle with remaining rosemary, thyme, salt and pepper.
