Here is how you make Roasted Chicken over Squash:

Makes 4 servings.Chop peppers and onions and saute in olive oil for about 5 minutes. Add the butternut squash and saute for another 5-10 minutes. Stir in the thyme and salt and pepper to taste. Pour into a 9x13 baking dish. Wash and pat dry the chicken thighs. Arrange the chicken on top of the vegetables, skin side up. Mix the apple sauce and mustard and baste onto the chicken.
