3 tbsp butter divided
4 tbsp jerk seasoning

Here is how you make Roasted Chicken with Potatoes:

Place chicken breast up on rack in roasting pan. Stuff with half the onions and secure the opening by pushing the legs through a small hole in the extra skin. Make sure the skin is nice and dry and spread 1 tbsp softened butter then sprinkle with 2 tbsp jerk seasoning. Arrange cut potatoes and remaining onion around the chicken and dot with remaining butter. Sprinkle potatoes with remaining jerk seasoning. Cover pan loosely with tin foil and bake at 350 for 1 3/4 to 2 1/4 hours until internal temperature reads 170 degrees. Bast chicken after 45 min and every 20 min or so after that. uncover the chicken for the last 30 min to brown. Let sit 10-15 min before carving.
