skinless chicken breast, 1 cup chopped (about 1 breast)
fingerling potatoes, 1/2 lb, cut into 1" pieces
fresh sugar snap peas, 1 cup
red bell pepper, 1/3c diced
red onion, 1/3c diced
olive oil, 1 tbsp
distilled white vinegar, 1/2 tbsp + white cooking wine, 1/2 tbsp
tarragon
pepper
garlic powder

Note: Original recipe called for less red pepper and red onion (1/4c each for 4 servings), and also included dijon mustard (1 tbsp for 4 servings).
Note: Distilled white vinegar + white cooking wine was used to substitute for 1 tbsp white wine vinegar of original recipe.

Here is how you make Chicken, Potato, and Fresh Pea Salad:

Prep and Cooking times approximate.1. Grill chicken breast.2. While chicken is grilling, cut fingerling potatoes into 1/2" pieces and place in large saucepan. Cover with cold water and bring to boil. Once boiling, reduce to simmer and cook for about 10 minutes.3. After 10 minutes or when potatoes are mostly tender, add snap peas to water and cook additional 2 minutes or until peas are tender. Drain.4. Dice bell pepper and red onion while cooking potatoes/peas. Place in bowl.5. Chicken should be finished grilling around the same time as the potatoes and peas finish. Remove from grill and chop. Use 1 cup (about 1 breast). Place in bowl with bell pepper and onion.6. Add potatoes and snap peas to bowl. Add in olive oil, distilled white vinegar, white cooking wine, and spices to taste. Stir until well combined.7.
