1tbsp extra virgin olive oil
3 cups mixed baby greens
2 boneless skinless chicken breasts
1/4 cup Athenos Reduced Fat Feta Cheese
2/3 cup whole wheat couscous

Here is how you make Cooking Light Feta Chicken Salad with Basil:

1. Heat oven to 350 degrees.2. Place 2 boneless skinless chicken breasts in the oven on a piece of foil. Lightly season with pepper and salt. Cook for 15 minutes. Turn over. Cook for 15 more minutes or until center of chicken is no longer pink. 3. Bring 1 1/4 cups water to a boil in a medium saucepan. Add couscous; cover and let stand 5 minutes.4. While couscous stands, dice chicken breasts.5. Combine chicken, balsamic vinegar, the zest of the lemon rind, the juice from the lemon, basil and olive oil in a large bowl, tossing gently to coat.6.
