This recipe makes 4 average sized pita pocket sandwiches, possibly with some "stuffing" or salad leftover that is great by itself.Preheat oven to 275, then put pita bread wrapped in foil in oven to keep warm/toast while cooking everything else. Combine lemon zest, juice, oil, vinegar, garlic, parsley, oregano in a bowl and whisk to make dressing. Cut chicken breast into small strips or pieces, then pour half of the dressing over chicken. Turn the chicken to coat in dressing. Combine all veggies in a bowl, then add the rest of the dressing and toss to make the filling/salad. Grill or saute chicken until fully cooked.
