Here is how you make Hello Fresh Chicken and Potato Salad:

1. Cut the potatoes into bite sized pieces. Put them in a pot with salt and enough water to cover them. Bring to a boil and cook 10-12 minutes. 2. Add peas to potatoes and cook an extra 2-3 minutes until all is tender. Drain. 2. While peas are cooking, toast pine nuts in a pan over medium low heat, tossing until light brown, 2-3 minutes. 3. Remove pine nuts from pan and cook chicken (seasons with sald and pepper) in a drizzle of oil over medium high heat, 3-4 minutes per side.4. Trim the scallions, slice the lemon in half. 5. In a medium bowl, toss together peas and potatoes, scallions, pine nuts, and pesto. Squeeze half of the lemon juice over this. Season to taste with salt and pepper. 6. Slice the chicken into strips, and plate potatoes with chicken on top. Drizzle with some extra lemon juice or pesto if desired.
