Here is how you make Mels Larb Chicken Salad:

Ingredients;2 large chicken breasts1 teaspoon minced ginger1 teaspoon red pepper flakes1 clove minced garlicchopped scallions1/4 cup chopped cilantroCut the chicken into large chunks and then put in food processor with the other ingredients. Pulse until it looks like chunky ground chicken.Saute in skillet over medium heat using your choice of spray or oil.meanwhile mix the ingredients below:2 Tablespoon Sesame oil2 Tablespoon fish sauce1/4 cup soy saucejuice from 1/2 a lime1 clove minced garlic1 teaspoon rice wine vinegar1 Tablespoon honey or brown sugar1 teaspoon garlic chili sauceWhen the chicken is cooked through, turn off the heat and let sit for 5 minutes to cool some and then add the marinade mixture above, stir it all together and then add a whole bag of cabbage slaw mixture. Stir that all together and then scoop into bowls, garnish with sesame seeds and green onions. You can get the fish sauce, soy sauce, sesame oil, and garlic chili sauce in your grocers asian section or at a World Market if you have one close.
