2 boneless, skinless chicken breasts
1 tsp cayanne pepper
1/2 tsp red pepper flakes
1 tsp black pepper
1/2 tsp salt
1/4 tsp cumin
1/2 bag shredded cabbage and carrots for coleslaw
1/2 cucumber, julienned
1/2 cup bean sprouts
1-2 green onions, chopped
handful of cilantro, chopped
3 tbs chunky peanut butter
2 tbs lite soy sauce
2 tbs rice wine vinegar
1 lime, both the juice and the zest
dash of sesame oil
1 tbs chili paste
1/4 tsp black pepper

How Do I Make Spicy Thai Chicken Salad?

Here is how you make Spicy Thai Chicken Salad:

1) Blend the cayenne pepper, red pepper flakes, black pepper, salt, and cumin together in a small bowl. Rub it on the chicken - covering all of the meat.2) Cook the chicken on the grill or stovetop - five minutes per side, or until the juices run clear (for the love of God - do not overcook your chicken).3) While the chicken is cooking, chop up the veggies and cilantro and combine in a large mixing bowl. Also, mix in the lime zest.4) Next, whisk together the peanut butter, soy sauce, vinegar, lime juice, sesame oil, chili paste, and black pepper. Taste for seasoning. If it?s too thick, add some more vinegar or soy sauce. If it?s too thin, add some more peanut butter. It should have the consistency of a slightly watered-down ranch dressing.5) Add the dressing to the bowl of veggies and mix. The vinegar in the dressing will help to break down the cabage just a little bit. You?ll want it to sit for a few minutes to let everything mingle.6) Take the chiken off the heat and let it rest for five minutes. Then chop, slice, dice, or shred it up and add it to the salad. You can use either warm or cold chicken. Number of Servings: 2Recipe submitted by SparkPeople user L810SCOTT87.
