In a large bowl add 1 tbl balsamic vinegar, 1 tsp olive oil and the cut up chicken. Let it marinate for 5 minutes. In a large serving bowl, mix together spinach and mushrooms. When bacon is crispy,remove from pan and add to the spinach and mushroom, wipe pan clean and add 1/2 cup olive oil to pan and add onions. Cook for 4 minutes and remove from heat.
