4 chicken breasts halved
1 cup corn
1 can of black beans
1 cup of salsa
1 cup petit diced tomatoes
1 Tbsp cilantro
Salt
Pepper
Chili powder
3 cups brown rice


How Do I Make Chicken and Salsa?

Here is how you make Chicken and Salsa:

Coat non-stick skillet wtih cooking spray and warm on med-low heat. Take chicken breast halves and coat wtih salt, pepper, and chili power do you liking and place in skillet. Turn up heat to med-high. Cook on both sides for roughly 5 to 7 minutes until browned. While chicken is cooking, drain your black beans and corn in strainer. When chicken is browned take out of skillet and pat dry. Return chicken to skillet and add blackbeans, corn, salsa, tomatoes, and cilantro and cover for about 20 to 25 minutes on low heat. While this is cooking prepare your rice as to the instructions on box. Serve chicken and salsa over rice. You may sprinkle some low fat cheddar over this but be advised it will increase your caloric intake. Makes 8 servings with 1/2 chicken breast, 1/2 cup rice and cup of liquid.
