2 small bell peppers, sliced into rings
1 15 oz can diced tomatoes
1/2 medium onion, coarsely chopped
3/4 cup cilantro, divided
1 clove garlic
nonstick spray

Heat oven to 400?. Place pepper rings on spray baking sheet and spray with nonstick spray, bake until peppers are roasted. Place tomato sauce, onion, cilantro and garlic in blender. Spray medium skillet with spray; brown chicken . Add tomato/cilantro sauce to chicken in pan and heat to boiling; reduce heat and simmer 5 minutes until chicken is cooked.
