This recipe originally comes from the Kraftfoods.com website. I've modified a few things to make this work better for my family. Makes 6 Servings.Coat chicken with flour.Heat oil in large skillet on medium heat.Add chicken; cook 5-6 minutes on each side or until cooked through (165 degrees).Remove chicken from skillet, reserving drippings in skillet.Cover chicken to keep warm.Add broth to skillet; stir to scrape up browned bits from bottom of skillet.Add cubed cream cheese. (original recipe cuts cream cheese and broth in half, but I like having the extra sauce to put over the chicken or a side dish of asparagus). Cook 2-3 minutes or until cream chees is melted and sauce starts to thicken, stirring constantly with a wire wisk.Return chicken to skillet; turn over to coat both sides of chicken with sauce.Cook 2 minutes or until chicken is heated through.Sprinkle with parsley (optional).Remove from pan place on serving plate; sprinkle spinach on top of chicken.Drizzle 1/4 to 1/2 of sauce on top of spinach; sprinkle bacon bits on top.
