1 large free range chicken breast (or two to four thighs, depending on size. A total of 8 ounces of flesh)

1 T. olive oil
1 onion, diced
1 large carrot, diced
1 celery stalk, diced
1 c. low sodium chicken broth
1 roasted red bell pepper, sliced into strips
1-2 T. paprika (half hot, half sweet or smoked)
1 T. Tomato paste
1 c. low fat yogurt

Here is how you make Chicken Paprika with Yogurt Sauce:

Remove skin from chicken breast (or thighs). Lightly salt and pepper, and allow to sit covered for 20 minutes. Begin straining yogurt (let drain through coffee filter). Roast red bell pepper. Brown chicken in olive oil. Remove. "Sweat" onion, carrot, and celery. Stir in chicken broth and scrape brown bits into broth. Return chicken to pot. Cover and cook gently for 20 to 30 minutes, or until chicken is cooked through. Remove chicken to another plate and remove bones. Scoop out cooked veg and discard. Strain stock through a chinois or cheesecloth-lined sieve. Return stock to pan, and stir in tomato paste and paprika. Add additional liquid if necessary. Add chicken and bell pepper and heat up. Adjust seasonings (maybe add some herbs de provence, garlic powder, or whatever). Stir in yogurt, and serve over noodles or brown rice.Serving Size:?2 4 oz servings with sauce
