1 tsp butter
24 oz boneless skinless chicken breast pieces
1/2 cup onion, diced small
2 cloves garlic, minced/crushed/pressed
1/3 cup sundried tomatoes (not in oil), diced small
2 Tbsp flour
1.5 cups chicken broth
1/2 cup white wine (or more broth)
3 Tbsp fat free half and half
1/4 cup chopped fresh basil

Here is how you make Chicken with Sundried Tomato Sauce:

Saute the chicken in the olive oil and butter until cooked through. Set aside on a covered plate to keep warm. Reserve the pan to make the sauce.Add the onion, garlic, and tomatoes to the saute pan, and cook until the onions become translucent, but keep stirring so the garlic doesn't burn. Add the flour and stir until the vegetables are completely coated. Over medium-high heat, slowly Saute the chicken or pork in the olive oil and butter until cooked through. Set aside on a covered plate to keep warm. Use the same pan to make the sauce.add the broth, a few tablespoons at at time, constantly stirring to the flour doesn't create lumps. Once the broth is incorporated, bring to a boil and add the wine. Allow to reduce by 1/3, then add the half and half. Allow to reduce until you reach the desired consistency.
