Preheat Oven To 375 degrees.In a baking dish place a baking rack.Place chicken on the baking rack.Using the listed seasonings, season the chicken on the top side to taste (make sure to crush the rosemary by hand and then add to the top of the chicken).Pour about 1/2 to 1 tblsp of marinade over each piece of chicken. GENTLY rub the marinade over each piece of chicken, making sure to coat both sides thoroughly.Carefully pour the red and rice wine into the bottom of the baking dish, ensuring that a thin layer of liquid is covering the bottom of the dish.Carefully pour the water into the bottom of the baking dish.Cover the baking dish with aluminum foil and place in oven.Bake for 35 minutes.Remove from oven and turn chicken over. Using a turkey baster, baste the chicken with the wine sauce which should now also begin to contain drippings from the chicken. Baste thoroughly.Cover with aluminum foil and put back in oven.Cook for 20 minutes.Remove from oven and turn chicken over. Baste thoroughly.Return to oven uncovered and bake for another 5 - 15 minutes (until skin begins to crisp and brown).The wine sauce should condense down.Remove from oven.Arrange 2 chicken legs per plate.
