Being half Iranian, I grew up with a dish called "Fesenjoon" - it's usually made with ground up walnuts, pomegranate and chicken. This recipe is the Americanized version - using canned cranberry sauce instead of pomegranate to make it that much easier (and cheaper!) It's great over basmati rice - or you could leave the chicken out of the recipe to make a yummy vegetarian dish!

The ingredients for Cranberry Walnut Chicken Sauce are:

3 cans cranberry sauce
2 1/2 chicken breasts (no skin)
4.5 cups (about 3 medium bags) of shelled walnuts, crushed
1 large white onion, diced finely
lemon juice to taste (I put in about 3-5 tbs)
2 tbs smart balance buttery spread (or olive oil, or butter, something to saute)
1/2 a tiny can of tomato paste (.5 of a 6 oz can)


How Do I Make Cranberry Walnut Chicken Sauce?

Here is how you make Cranberry Walnut Chicken Sauce:

Put the two pieces of chicken in the oven at 350 and bake while you do the rest of this.Crush up the walnuts and dice the onion if you haven't already.If you are going to have this with rice, now's the time to start the rice also so it can all be finished together.Add the onions to a large saucepan with the smart balance and saute until they are nice and goldenbrown. Add the walnuts and keep stirring! Walnuts go from raw to burned pretty quickly, so keep an eye on them. Once the walnuts are nice and browned, add the cranberry sauce! Keep stirring!Then add the 1/2 can of tomato paste, and stir some more! Taste it and decide if it's too sweet - (it will be) - and add some lemon juice! I would add about 1 tbs at a time, and just keep adding and stirring and tasting until you like it.Simmer for a little while longer - take out the chicken and cut the chicken into small chunks or shreds and add it to the sauce mixture. Now you're ready to eat!This makes about 24 1/2 cup servings. I did not include the rice in the calculations.
