2 T. Olive Oil
6 Chicken Thighs, skin removed
1 tsp Salt
1/2 tsp Black Pepper
1 Medium Onion sliced
1 Cup Fat Free Chicken Broth
1/2 Cup water
1 14.5 oz can Crushed Tomatoes in thick puree
1 tsp Thyme, ground
1/2 T. Dried Rosemary
1 T. Lemon Pepper
2 T. Fresh Chopped Parsley


How Do I Make Easy and Elegant Chicken Thighs with Sauce?

Here is how you make Easy and Elegant Chicken Thighs with Sauce:

Prepare rice according to directions. Heat the oil in a 12 inch skillet over medium high heat. Pat chicken dry with a paper towel and season with salt & pepper. Brown chicken meat side down first and turn once for about 4 minutes per side. Remove from skillet to a plate and reserve. Pour off all but about 1 tablespoon of oil from the pan. Add onion to the pan and saute until tender. Add the fat free chicken broth and water then stir, scraping everything off the bottom of the skillet. Turn the heat to high and reduce by half. Add the crushed tomatoes, dried herbs and lemon-pepper. Add the chicken back in, cover and cook on medium-low for 40 minutes. Put chicken over rice and cover with sauce. Garnish with fresh chopped parsley. This recipe serves 4-6 people. My husband usually eats 2 portions and I have 1 leaving enough for planned overs for another evening.
