1 1/2 cups canned mandarin oranges, drained
3 Tbsp cilantro
4 4oz boneless, skinless chicken breast
1/2 Tbsp olive oil

Here is how you make Fusion Chicken:

In a small bowl, combine water, hoisin sauce, preserves, splenda, soy sauce and orange zest; set aside.Chop mandarin oranges and gently toss in a small bowl with cilantro; set aside.Rinse chicken and pat dry. In a large skillet cook chicken in hot oil over medium heat for 3 to 5 minutes or until chicken is browned, turning once. Drain off any fat. Carefully pour hoisin mixture over chicken. Bring to boil then reduce heat. Simmer, covered for 8 to 10 minutes or until chicken is tender and no longer pink. Remove chicken from skillet and keep warm. Boil sauce gently, uncovered, for about 5 minutes. Return chicken to skillet. Heat through, turning once to coat with glaze.
