Place frozen chicken breasts in bowl. Sprinkle with Lemon Pepper and coarse salt. Microwave on "defrost" setting 6-8 minutes until chicken is softened but not cooked. Cut chicken into cubes.Put olive oil in a frying pan. Add chicken cubes and saute until mostly cooked. Add garlic, parsley, and black pepper to taste, then saute a few minutes longer to combine flavors.Add crushed and diced tomatoes, stir well, and reduce heat to low.Using a blender or food processor, reduce edamame to powder. Add edamame powder to mixture in pan, stir well.
