Heat oven to 350.Heat oil in large skillet over medium heat. Add onion and turn heat to low. Carmelize onion until light brown. Add garlic, saute briefly. Increase heat to medium and add chicken. Brown on both sides. Remove chicken and onion mixture and put in a 9x13 pan. Combine stock and vinegar. Deglaze pan with this mixture, then bring to a boil and simmer until thickened. Pour mixture over chicken and add sun dried tomatoes.
