1/4 cup red bell pepper, thin strips
1/4 cup green bell pepper, thin strips
1/4 cup white onion, thin strips
1 cup low sodium chicken broth
3 tbsp honey mustard (I use Texas Pete.)
2 tsp white wine vinegar
1 tsp thyme, ground
4 smoked andouille chicken sausages, precooked and sliced (9 oz - I used a pack of Hans' All Natural.)

Heat 4 spritzes of cooking spray in a large skillet over medium heat.Sautee peppers and onions until just shy of tender. Add creole seasoning and sausage. Heat for 1 more minute.Add chicken broth, honey mustard, white wine vinegar, and thyme. Simmer until sauce thickens.Serve over rice. (Rice not included in nutritional calculations. I used Uncle Ben's Whole Grain Brown. Looks like dirty rice, anyway!)
