5 T. butter, divided
1 lemon, juiced
12 oz. chicken breast, cubed
1 tsp. dried basil
1/2 tsp. garlic powder (NOT garlic salt)
1/2 c. walnuts, lightly crushed (optional)
8 oz. chunky pasta (penne, farfalle, etc.)
2 T. crumbled gorgonzola

Here is how you make Pumpkin Pasta w/ Chicken in Lemon Gorgonzola Sauce:

Bring a large pot of salted water to boil. Cook pasta as directed. Drain; keep warm till everything is ready to be combined. While pasta water comes to a boil, melt 1 T. butter in large skillet over medium heat. Spread pumpkin cubes in a single layer and cook 5 minutes undisturbed. Flip pumpkin and cook another 5 minutes undistubed. Remove from pan; keep warm. Melt another tablespoon butter in the same pan and add the chicken cubes, basil, and garlic powder. Cook, stirring occasionally, till chicken is lightly browned and cooked through. Remove chicken from pan when done. Melt remaining butter in the same skillet over low heat. Add lemon juice and ladle 1/2 cup of the pasta cooking water out of the pasta pot and into the skillet. Whisk till well combined. When pasta and chicken and pumpkin are all cooked, combine in skillet and toss well to coat with sauce. Gently stir in walnuts and gorgonzola and serve.
