Rosemary, dried, 2 tbsp
Canola Oil, 2 tbsp
Sherry, dry, about 2 fl. oz

Here is how you make Rick n Brandy's spaghetti sauce with ground chicken:

Saute onion and rosemary in most of the canola oil over medium-high heat until onion is soft and turning clear. Stir several times while cooking. Add garlic and mushrooms and cook until mushrooms soften and release their liquid. Add sherry and cook until the liquid mostly evaporates. Add a small amount of canola oil to pan. Add chicken and reduce heat to medium. As chicken cooks, break it into small chunks. When chicken is cooked through add basil and all of the tomato products. Stir until well mixed. Reduce heat to medium-low and cover. Simmer for about 10 minutes and then taste. Correct seasonings with salt and pepper. Can also add a small amount of honey to add sweetness or sumac to balance bitterness. Simmer 10 more minutes to meld flavors. Serve over whole wheat pasta with parmesan cheese.
