I got the main recipe from Giada de Laurentis and added few little things and changed a couple other things... A bit of prep, but while the chicken cooks, you can make some pasta and a salad. If you want to spend more and save time, buy the pre-prepped veggies at the store. You can also do diced tomatoes (as original recipe calls for), but the roasted tomato flavor adds a lot of depth.

What Are The Ingredients For Roman Chicken Recipe?

The ingredients for Roman Chicken are:

1. Preheat oven to 400. Prep veggies. Slice onion and red pepper into thin strips. Mince garlic. Chop proscuitto into large dice. (Go to a gourmet food shop and get good proscuitto, not just presliced deli proscuitto. It's less salty and you'll have more variety to choose from. If you don't have proscuitto, try center cut, non-smoked bacon. Smoked bacon will change the flavor of the sauce- not good.)

2. a. Heat oil in heavy, large skillet. De-skin and trim fat from the chicken breasts and thighs, but leave bones in. Makes the chicken SO juicy. Sprinkle with salt and pepper. When oil gets hot, brown both sides of chicken.
b. Put cherry tomatoes on small baking sheet/roasting pan. Spray with cooking spray and sprinkle a little salt and pepper. Place in oven and roast for 10 minutes.

3. When chicken is just browned (not cooked through), set aside on a plate. Over medium heat, throw the proscuitto in the pan drippings. Let it crisp a bit. Throw the peppers and onions in the skillet with the proscuitto. Let them brown up a bit- maybe 5 -7 minutes. Finally throw in the garlic. (Garlic is last since it burns first.) Throw in roasted tomatoes,canned plain tomato sauce, white wine, thyme and oregano. Scrape up all the brown bits on the bottom of the pan. Add chicken broth. Stir. Bring to a boil for one minutes. Turn heat to low.

4. Add the chicken back to the pan, meat side down. Simmer the chicken for 20-30 minutes or until cooked through.
