2 cups chicken broth, divided
1/3 cup seasoned flour (salt/pepper/taste)
1 14.5 oz can diced tomatoes
3 scallions, chopped


How Do I Make Saucy Chicken?

Here is how you make Saucy Chicken:

put 1/2 cup of the broth into a pie plate, and put seasoned flour into a 1-gallon ziplock bag. Dip chicken in broth, then put it in the bag. Close and shake bag until all chicken is coated evenly. heat nonstick skillet (sprayed with nonstick spray) over medium heat. Add coated chicken, but save the remaining flour. Cook chicken until browned on both sides, turning only once. Remove chicken from skillet and set aside. Add any remaining flour to skillet and stir with a whisk until flour is toasted brown. Slowly add the remaining 1-1/2 cups broth, stirring constantly, and cook until flour is dissolved and liquid starts to thicken. Add tomatoes and scallions, bring to boil.
