Chop Veggies and set asidePut oil and garlic in a skillet and cook on high for 5 min, stirring often. Turn heat down to medium and add chicken. Lightly sprinkle Creole Seasoning on chicken (add remaining seasoning to pot). Cook chicken mostly through. Pull chicken from skillet, cool, and cut into bit sized pieces.Add veggies to skillet and cook for 10 min.Add veggies, chicken, V8, Diced Tomatoes, Tomato Paste, and seasonings to pot and bring to low simmer and cover. cook pot 1-2 hours until all items are cooked and well mixed. The longer it cooks on lower heat the more flavorful it will be.Add sausage to skillet and brown. Cut into bit sized pieces and add to pot.Make rice in separate pot following box instructions.When you think the large pot is almost ready, add rice.
