Cook in non-stick pan until meat is browned. Then add the onion, peppers & celery plus the bay leaves, thyme and pinch of salt and pepper.Cook for about 10 mins until veg is softened. Now add your garlic, tomatoes and hot chicken stock/broth. Bring everything to the boil then turn down to low-medium heat and simmer for 20 mins.Now add the rice and mix well.
