2 BoneLess SkinLess Chicken Breasts
Salt/Pepper
0.5 cup Canola Oil
0.5 cup Flour
1 large Onion, chopped
1 Med. Green Bell Pepper, chopped
3.0 clove Garlic minced
1 cup Wine, Pinot Grigio
1 qt hot water
1.0 tsp Hot Pepper Sauce
2 Tbsp Worcestershire
1 lbs Anduille Sausage (per each- 4 inch piece)
2.0 package (10 oz) Okra, frozen,
8 Medium size shrimp (8 shrimp)
3.0 oz Cod (fish)
2 Bay Leaves
1/2 tsp salt
1/2 tsp pepper

How Do I Make Chicken Sausage and Seafood Gumbo?

Here is how you make Chicken Sausage and Seafood Gumbo:

Pour oil in dutch oven and heat to med hi. Salt and pepper each chick breast and brown each side quickly in oil. Remove chicken and set aside Chicken should be nicely browned on all sides but not cooked all the way through. Add the flour to the hot oil and stir continuously until it smells like browned flour. Add the garlic, onion, and pepper to the flour and stir. Cut up chicken into bite sized pieces and add to the vegetables. Cook until the onion is done. Add hot water under it covers the vegetables and chicken by about 1.5 inches. Add the wine, Tabasco, Worcestershire, Bay leaves, salt and pepper. Bring to simmer and reduce heat to simmer. Cover and cook for 1 hour. Slice the sausage into 1/2 inch pieces and add to pot. Cover and cook for 30 minutes. Add the okra and cook another 20 minutes. Add the shrimp and bite sized pieces of cod. Cook until shrimp is done. Serve over white rice, sprinkle with Fil? and tobasco.
