1 lb fresh Chinese noodles or 1 lb spaghetti whole wheat
2 tablespoons sesame oil
4 scallions or 4 green onions, sliced thin on diagonal
1 medium carrot, peeled and grated on large holes of box grater (about 2/3 cup)
1/2 cup bean sprouts
1 cup grean beans, cooked and chopped
crushed red pepper flakes (optional)

1 First, make the shredded chicken. Boil 4 qts. of water. When the water reaches a boil, add the chicken and cook for about 20-25 minutes. 2 Pour out the water and allow the chicken to cool on a cutting board or in a bowl. 3 In a blender or small food processor, puree the tahini, peanut butter, garlic, ginger, soy sauce, vinegar, and hot sauce until smooth, about 30 seconds. With the machine running, add hot water 1 tablespoon at a time until the sauce has the consistency of heavy cream, about 5 tablespoons; set the mixture aside (it can be left in the blender jar or food processor workbowl).
