Put chicken breasts between two pieces of plastic wrap and use flat side of meat mallet to flatten to 1/2 inch.Wisk together egg whites and 1/2 teaspoon salt in a shallow dish until loosened but not frothy. Put sesame seeds in another shallow dish.Pat chicken dry and sprinkle with the rest of the salt. Dip chicken in egg whites, shake off excess and then dredge through sesame seeds to coat.Transfer to a wax paper lined tray. Heat oil in a heavy skillet over moderately high heat until hot but not smoking. Turn down to medium and cook chicken three pieces at a time, turning once, until cooked through (about 10-12 minutes).
