3/4 C Green Bell Pepper, diced
3/4 C Onion, diced
1/2 C Celery, diced
8 oz. Chicken Breast, skin/boneless
1 C Brown Rice, medium grain
2 C Chicken Broth
1/2 tsp Basil, dried
1/2 tsp Thyme, dried
2 cloves garlic, minced
1 can diced Tomatoes, low sodium
5 Andouille mini sausages, cut diagonally
6 Prawns (20-30 count)

Here is how you make Jambalaya w/Chicken, Andouille and Shrimp:

1. Saute onion, bell pepper & celery in 2 Tbsp olive oil until tender.2. Add broth, rice, tomatoes, garlic and spices. Stir and bring to a boil. Cover and reduce heat to simmer for 30 min.3. Cook Chicken in 1 Tbsp olive oil.4. When chicken is cooked through, remove from heat and slice into bite size pieces.5. When veggies and rice have simmered 30 minutes, add chicken and sausage, stir, cover and continue to simmer for 15 minutes.6. Add shrimp, stir and simmer for 15 minutes.7.
