Boneless, skinless chicken breast or tenders, about 1 pound, fresh or canned pineapple chunks, 1 cup pineapple juice, 4 T Low sodium soy sauce, 1 teas. ground ginger, 2 cloves garlic (minced) ,assorted chunks of fruit & veggies (I used onions, cherry tomatoes, broccholi, cauliflower, peppers, pineapple, & melon - basically what was leftover after a barbeque!)

Here is how you make Hawaiin Chicken Skewers:

Cut up the chicken, fruit & veggies into similar size chunks. Soak wooden skewers in water. Assemble skewers, alternating fruit, chicken & veggies. In a shallow pan, combine pineapple juice, soy sauce, garlic(minced) and gingerLay your shish-ka-bobs in marinade for at least an hour, turning evey 20 minutes. Then grill on medium heat until chicken is done.I used about 10 skewers...served with rice (flavored with chicken stock and poulty seasoning) this should actually feed at least 3 nicely.Number of Servings: 3Recipe submitted by SparkPeople user KGTTEB.
