1 medium onion, minced
1/2 tsp ground cinnamon
1/8 tsp ground cloves
1 oz bittersweet (or semisweet) chocolate, chopped coarse
2 medium garlic cloves, minced or pressed (about 2 tsp)
2 cups low-sodium chicken broth
1 (14.5 oz) can diced tomatoes, drained
1/4 cup raisins
2 Tbsp sesame seeds, toasted, plus extra for garnish
1/4 cup almond butter
salt and ground black pepper to taste
3 1/2 lbs chicken, skin removed

Here is how you make Chicken Mole (slow-cooker):

Toast chiles in the oven at 350 until fragrant and puffed, about 6 minutes. Seed and stem chiles and break into small pieces.Heat oil in skillet over medium heat until shimmering. Add the onion and cook until softened (5 to 7 minutes.) Stir in the toasted chile pieces, cinnamon, cloves, and chocolate... cook until the spices are fragrant and the chocolate is melted and bubbly (about 2 minutes.) Stir in the garlic and cook until fragrant (about 30 seconds.) Stir in the broth, tomatoes, raisins, sesame seeds, and almond butter and cook, stirring occasionally until slightly thickened and measuring about 2 1/2 cups (about 10 minutes.) Transfer the chile mixture to a blender (or food processor) and process until smooth (about 20 seconds.) Season with salt and pepper. (At this point, sauce can be cooled and refrigerated for up to 3 days. Loosen the sauce with water as needed before continuing with the recipe.)Place sauce and chicken into slow cooker.
