Cook diced celery, carrots, and onions until slightly softened. Add chicken stock and poultry seasoning, bring to a simmer. Drop pieces of chicken into broth. Cover and cook 20 to 25 minutes, allowing chicken to cook through and vegetables to become tender. Add egg noodles to soup, cook according to package directions--approximately 8 to 10 minutes until al dente. Serve.Depending on the size of egg noodles you use, you may need more or less. The first time I tried this recipe I used 3 cups of the wide noodles, and it was WAY too many. The thinner egg noodles are better, if you can find them, but if you prefer the wide noodles, cut back to 1.5 cups or less.Makes a large pot of soup--about 8 servings.
