Here is how you make Carol's Chicken and Rice Soup:

Salt and Pepper chicken breast and place them on a baking pan sprayed with Pam. Sprinkle with 1/2 the herbs.Bake at 350 degrees for about 20 minutes.In a sauce pan, make 4 servings of brown rice following the package instructions.In a large stock pot saute carrots, celery, zucchini and onions over medium high heat in olive oil for about 8 minutes. Add the rest of the herbs, mushrooms and garlic. Saute for about 2-3 more minutes. Sprinkle w/ salt and pepper and a couple of TBSP of whole wheat flour. Stir as the veggies and flour become a paste. Add Chicken Stock and stir until the broth is smooth. Lower heat to a simmer. Add prepared rice, spinach and chicken. Taste.
