Here is how you make chicken chili soup:

Add oil to a large pot over med-high heat, add onions and carrots. Sautee in oil for 10 min or so till soft and onions have a little color. Add dry rice and half the seasoning packet to the onion mixture and coat with oil. Cook till the rice has a little color about 5 min. Slowly add the remaining 8 ingredients and the other half of the seasoning packet. Bring chili to a boil. You may need to turn the heat up to high. Once the soup has come to a boil cover and turn the heat down to low and simmer for 15-20 min. Let it sit and cool slightly.
