1/2 cup of chopped white onion
1/2 cup of chopped mushrooms
1 TBSP olive oil
1 cup of chopped carrots
4 Chicken breasts - raw
1 can of nonfat chicken broth
2 cans of cream of mushroom soup
1 cup of skim milk or condensed skim milk
1/2 10 oz package of frozen broccoli or peas


How Do I Make Chicken Tonight?

Here is how you make Chicken Tonight:

Chop fresh veggies. Heat oil in a nonstick pan. Add onions, mushrooms and if desired - carrots. Cook on medium high until onions and mushrooms are translucent. Take out of pan and set aside. Brown chicken breast on all sides in remaining oil in pan. Add chicken broth to high heat and cover. Reduce chicken broth for 5-10 minutes (allowing breasts to steam under lid). When most of liquid is gone, add 2 cans of soup, milk, sherry and rest of ingredients - onions, mushrooms, broccoli. Set fire on low and cover with lid for 20 additional cook minutes.
