2 cups cut up chicken light and dark
2 carrots sliced
2 large stalks celery with leaves sliced
1/2 large onion diced.
1 tsp chopped garlic
1/4 bell pepper chopped
1 cup green beans cut to size
1.5 cups wild rice mix
sage, thyme, basil, oregano, salt and pepper to taste.

Here is how you make Chicken vegetable and wild rice soup:

I like to use my leftover roasting chicken or turkey. Remove all remaining meat. Place carcass in stock pot of appx 16 cups water. bring to boil and then let simmer for an hour or two. Cool in fridge and remove any cooled fat. strain stock into another large pot saving any other meat pieces. discard carcass. Add two large boullion cubes. I prefer the vegetarian but chicken will do. Add onions, garlic, chicken and chopped vegetables, bring all to boil. Add spices and herbs according to taste. Add rice mix. Let cook at least 45 mins at a simmer. I like to cook 2+ hours. Serve 8oz servings. You should have some liquid boil off and be left with about 12 cups. You can add crackers, croutons, shredded cheese, etc. I would serve 16 oz if this is a main course.
