Here is how you make Chicken Vegetable Quinoa Soup.:

Add everything but the Quinoa to a soup pot (3 quart or larger). Bring to a boil, then simmer until vegetables are tender, about 20 minutes. Add Quinoa and boil for 5 minutes, then turn off and leave covered for 15 minutes. You can boil for 15 minutes, but I prefer to boil and then "soak" the quinoa until done - less chance of burning or sticking.Check seasonings and serve.Serving Size:?Makes about 2 quarts, or four 2 cup servings
