1 C diced celery
1/4 C onion, minced
1 1/2 C salad dressing
1 can sliced water chestnuts
4 eggs
3 C milk, 2% or nonfat
2 cans cream of chicken soup
3/4 C mayonnaise, light

How Do I Make Escalloped Chicken?

Here is how you make Escalloped Chicken:

Spray 9"x12: pan with non-stick spray. Place 1/2 of bread on bottom of pan. Mix together chicken, celery, onion, salad dressing and water chestnuts. Place on top of bread, then top with remainder of bread cubes. Mix together eggs, milk, salt and pepper and pour over all. Cover and let stand overnight in refrigerator.Baked covered about 1 hour. Remove cover. Mix together soup and mayo and spread on top of chicken dish. Sprinkle cheese and almonds on top. Bake uncovered about 15 minutes.
