In a large stockpot, combine chicken stock, celery, onion, carrots, bay leaves and salt and pepper. Bring to a boil over medium heat. While stock and vegetable mixture is heating, grill chicken breasts; while on grill, season lightly with ground coriander and ground cumin. After chicken has cooked thoroughly, dice and add to soup.
